Sunshine, please.

Good morning. Need a little sunshine, please...even just a little. Moving from a sunny place to mostly a rainy place takes a little getting used to. I guess it makes you really appreciate the sunny days that come around every once or MAYBE twice a week. Well, lately anyway.
I have enjoyed the rain though, I love hearing it fall on the house.

We are having the wonderful people that Sid works with over tonight for brisket. I have my fingers crossed that it will turn out yummy and tender. Cooking a pot of beans, Mom's cheesy potatoes, avocado/sun dried tomato salad, Mary Helen rolls and strawberry cake. Should be a fun time.

Loving the Beth Moore bible study on Esther. Here is my favorite quote from yesterday's video:

Last bit of family news is that I took Wes in yesterday because he has had a bad cold and can't seem to shake it. He has pneumonia. Yes. that is right. Bad mother. I waited too long to get him in. The doc is also concerned about how his heart sounds. He is going to have him wear a holter monitor for 24 hours this weekend to check it out. I am not too worried about this because he had been diagnosed with an innocent murmer way back when he was a little boy. Of course, we will completely check it out. He is mad because he will miss his basketball game tomorrow. He is still sleeping. Thanks for a little prayer for our gentle giant. Blessings on your day. Amy

You're not missing any sunshine here....we've had lots of rain and clouds here lately and more to come. I remember having dinner at your house when I worked for Sid and I think I have dreams about those rolls that you make!Yummo!! Lucky group that gets to come to your house tonight!

Well, it's been snowing or raining, and very overcast here in Kentucky since Christmas. But mostly snow. I'm in good spirits, though, so I must not have Seasonal Affective Disorder. :) I am getting pasty white and blotchy and NEED some sun on my face. May even have to resort to the tanning bed if this doesn't clear up my March.

So easy it's embarrassing! Here it is: One box of Betty Crocker Red Velvet Cake mix. 1 semi sweet choc. chips 1 small Half and Half- (use half a cup) 1small carton of whipping cream 1 package of cream cheese Half cup sugar Bake cake (follow box directions), let cool and crumble. Stir together cream cheese, sugar and whipping cream with blender until smooth. Melt chocolate chips in bowl and then add half and half. Stir until smooth. Layer in trifle dish. Mom's Apricot Cobbler...

It is melt in your mouth good! Ok, I know that yesterday I wrote about not eating any more sugar and I'm not. This is for YOU. I just had to give you Mom's recipe. It is so easy and so incredibly yummy. Hope that you enjoy it. It smells heavenly while cooking too. Easy Apricot Cobbler Jan McCoy 1 cup flour 1 cup sugar 2 Tbs. Baking Powder (Mix well in mixing bowl) Add 1 cup Milk and about a third cup of oil Mix well. Pour in oblong Pyrex cake pan. Heat at least 1 quart of sweetened fruit (apricots) to boiling. Pour on top of the batter. Add dollop (don't you love the word dollop?) of butter and sprinkle sugar and cinnamon on top. Bake at 350 degrees for 40 to 45 minutes until brown. Enjoy. Camp Blue Haven-2012

Mountains green, sparkling streams, every morning you greet me. Pine trees tall, waterfalls, blue skies canopied o'er me. May I know as I live and grow, God forsakes me never. May His love from above bless Blue Haven forever.  And what a blessing it was this summer to be back up in the cool mountains with so many people that we love.  As I reflected on this special place I thought about how big of an influence it has been on our children and our hearts.  At camp time slows down. There are so few distractions. The focus is on fellowship, enjoying God's creation and growing in knowledge of Him.  It has been a place to teach us what our life in this world should be about. It has also been a glimpse of what I think heaven will be a little like.  It has taught us to stay close to one another, to be accountable to each other and to live an out loud life for Christ.
