Weekend..Whew

Monday, Monday! It is cold and rainy here today. I have had to take Wes to the doc this morning and now Will has come home feeling under the weather! We all need some sunshine or we will all be under the weather! Anyway, I am making La Madeleine tomato soup (for me) and mac and cheese out of the box for Will right now. What a combination! Below are a few pictures from our weekend jaunt to Houston for the BBQ Cook off that takes place the weekend before the Houston Livestock Show and Rodeo start. Had a good time with the boys and Sid. It was a work trip for Sid with Nac. county and SFA hosting a BBQ booth.

We went down early and stopped in the outskirts of Houston at a shopping area and looked around a bit. It was a really cool square area and they had a live band and petting zoo going. I wanted to eat at La Madeleine but of course it was too GIRLY for the guys to eat there.
Oh brother. So I had to be satisfied just taking a picture of it.

This place was hopping. SO many people. I don't know what those girls were laughing at. Probably us being the only people that were not smoking or drinking at that moment. :)

I have not been to a carnival in a long time but my, the stuffed prizes have GROWN! This one was cool!
This is how I felt at the end of the long evening. Tired.

So easy it's embarrassing! Here it is: One box of Betty Crocker Red Velvet Cake mix. 1 semi sweet choc. chips 1 small Half and Half- (use half a cup) 1small carton of whipping cream 1 package of cream cheese Half cup sugar Bake cake (follow box directions), let cool and crumble. Stir together cream cheese, sugar and whipping cream with blender until smooth. Melt chocolate chips in bowl and then add half and half. Stir until smooth. Layer in trifle dish. Mom's Apricot Cobbler...

It is melt in your mouth good! Ok, I know that yesterday I wrote about not eating any more sugar and I'm not. This is for YOU. I just had to give you Mom's recipe. It is so easy and so incredibly yummy. Hope that you enjoy it. It smells heavenly while cooking too. Easy Apricot Cobbler Jan McCoy 1 cup flour 1 cup sugar 2 Tbs. Baking Powder (Mix well in mixing bowl) Add 1 cup Milk and about a third cup of oil Mix well. Pour in oblong Pyrex cake pan. Heat at least 1 quart of sweetened fruit (apricots) to boiling. Pour on top of the batter. Add dollop (don't you love the word dollop?) of butter and sprinkle sugar and cinnamon on top. Bake at 350 degrees for 40 to 45 minutes until brown. Enjoy. Camp Blue Haven-2012

Mountains green, sparkling streams, every morning you greet me. Pine trees tall, waterfalls, blue skies canopied o'er me. May I know as I live and grow, God forsakes me never. May His love from above bless Blue Haven forever.  And what a blessing it was this summer to be back up in the cool mountains with so many people that we love.  As I reflected on this special place I thought about how big of an influence it has been on our children and our hearts.  At camp time slows down. There are so few distractions. The focus is on fellowship, enjoying God's creation and growing in knowledge of Him.  It has been a place to teach us what our life in this world should be about. It has also been a glimpse of what I think heaven will be a little like.  It has taught us to stay close to one another, to be accountable to each other and to live an out loud life for Christ.
