Home Sweet Home...Whew...

Home. What a nice word. The comforts and rest of home. I love it. Nearly 30 days away from Home. What a great trip and time. I will write very soon about this grand adventure...but right now I am dead dog tired. Just like Sandy! Sandy is Michael and Jan's sweet dog. In this picture she is sleeping on the front porch of the cook's cabin at Blue Haven . She is precious and I love her. I got word while away that I have a very high Epstein Barr Virus count. Basically, I think it is like having a touch of Mono. Just so much energy to use and then it is gone! Praise the Lord that I know why I am feeling this way!


Rest, rest, rest. Love you all and will write and add a million awesome pictures soon! I have a MILLION loads of laundry to get through first though.

Sorry to hear about the Epstein Bar. REST!!!!! Not something you need on top of your thyroid, but Father PROMISES He won't let you have more than you can handle! (I remind Him at times of that promise! :)

So easy it's embarrassing! Here it is: One box of Betty Crocker Red Velvet Cake mix. 1 semi sweet choc. chips 1 small Half and Half- (use half a cup) 1small carton of whipping cream 1 package of cream cheese Half cup sugar Bake cake (follow box directions), let cool and crumble. Stir together cream cheese, sugar and whipping cream with blender until smooth. Melt chocolate chips in bowl and then add half and half. Stir until smooth. Layer in trifle dish. Mom's Apricot Cobbler...

It is melt in your mouth good! Ok, I know that yesterday I wrote about not eating any more sugar and I'm not. This is for YOU. I just had to give you Mom's recipe. It is so easy and so incredibly yummy. Hope that you enjoy it. It smells heavenly while cooking too. Easy Apricot Cobbler Jan McCoy 1 cup flour 1 cup sugar 2 Tbs. Baking Powder (Mix well in mixing bowl) Add 1 cup Milk and about a third cup of oil Mix well. Pour in oblong Pyrex cake pan. Heat at least 1 quart of sweetened fruit (apricots) to boiling. Pour on top of the batter. Add dollop (don't you love the word dollop?) of butter and sprinkle sugar and cinnamon on top. Bake at 350 degrees for 40 to 45 minutes until brown. Enjoy. Camp Blue Haven-2012

Mountains green, sparkling streams, every morning you greet me. Pine trees tall, waterfalls, blue skies canopied o'er me. May I know as I live and grow, God forsakes me never. May His love from above bless Blue Haven forever.  And what a blessing it was this summer to be back up in the cool mountains with so many people that we love.  As I reflected on this special place I thought about how big of an influence it has been on our children and our hearts.  At camp time slows down. There are so few distractions. The focus is on fellowship, enjoying God's creation and growing in knowledge of Him.  It has been a place to teach us what our life in this world should be about. It has also been a glimpse of what I think heaven will be a little like.  It has taught us to stay close to one another, to be accountable to each other and to live an out loud life for Christ.
