Happy Mother's Day




Mom, I loved you yesterday,


I love you tomorrow and everyday.


You were there for me my first day of school,


to hold my hand and give me courage to go.


You listened to me when I needed to talk,


you talked to me when I needed to listen.


You let me grow and learn from my own mistakes.


You never left my side when I was feeling down,


I knew you would be there to pick me up.


I wish there was a way I could repay all the things you have done for me,


but there's nothing great enough to repay the greatest mother of all.

The Narnia Wardrobe...

I remember the first time I spied the book "The Lion the Witch and the Wardrobe." It was in the library at Taylor Elementary School and I was in the sixth grade. The cover looked interesting and I fell in love with the fantasy and beauty of it. At the time I had no idea that the story was a loosely telling of the story of Jesus and morals and living by the truth of God.  I can't count the times I have read it sense then for myself, for the love of it and for our boys and now our grandchildren. Mom's Apricot Cobbler...

It is melt in your mouth good! Ok, I know that yesterday I wrote about not eating any more sugar and I'm not. This is for YOU. I just had to give you Mom's recipe. It is so easy and so incredibly yummy. Hope that you enjoy it. It smells heavenly while cooking too. Easy Apricot Cobbler Jan McCoy 1 cup flour 1 cup sugar 2 Tbs. Baking Powder (Mix well in mixing bowl) Add 1 cup Milk and about a third cup of oil Mix well. Pour in oblong Pyrex cake pan. Heat at least 1 quart of sweetened fruit (apricots) to boiling. Pour on top of the batter. Add dollop (don't you love the word dollop?) of butter and sprinkle sugar and cinnamon on top. Bake at 350 degrees for 40 to 45 minutes until brown. Enjoy. Red Velvet Trifle...

So easy it's embarrassing! Here it is: One box of Betty Crocker Red Velvet Cake mix. 1 semi sweet choc. chips 1 small Half and Half- (use half a cup) 1small carton of whipping cream 1 package of cream cheese Half cup sugar Bake cake (follow box directions), let cool and crumble. Stir together cream cheese, sugar and whipping cream with blender until smooth. Melt chocolate chips in bowl and then add half and half. Stir until smooth. Layer in trifle dish. Enjoy.  Alaska memories. Love this fat Santa above. Thrilled with how this little wreath turned out. Happy Christmas decorating! Remember: Your family probably does not care if your house looks like something out of Southern Living. They love the traditions and old ornaments and chipped Christmas mugs and plates.
