Football Signing Day

What a fun morning it has been. Will signed to play football for Harding University at a reception this morning at 10:00am. Andrew Morris also signed a letter of intent to play for West Texas A&M University. Here are some pictures of the signing:

This seems to have set the path for the next few years for Will. We are thrilled that he is going to Harding even though it is a long long drive. The coaches are men of character and have a great love for the Lord. It will a blessing for Will to play for them and a blessing for him to go to Harding University. Have a great day! Love, Amy

Congrats to the boys! How very exciting. I can only imagine how proud you must be...not only that he signed on for football but that he has made a commitment to a Christian higher education.

Red Velvet Trifle...

So easy it's embarrassing! Here it is: One box of Betty Crocker Red Velvet Cake mix. 1 semi sweet choc. chips 1 small Half and Half- (use half a cup) 1small carton of whipping cream 1 package of cream cheese Half cup sugar Bake cake (follow box directions), let cool and crumble. Stir together cream cheese, sugar and whipping cream with blender until smooth. Melt chocolate chips in bowl and then add half and half. Stir until smooth. Layer in trifle dish. Mom's Apricot Cobbler...

It is melt in your mouth good! Ok, I know that yesterday I wrote about not eating any more sugar and I'm not. This is for YOU. I just had to give you Mom's recipe. It is so easy and so incredibly yummy. Hope that you enjoy it. It smells heavenly while cooking too. Easy Apricot Cobbler Jan McCoy 1 cup flour 1 cup sugar 2 Tbs. Baking Powder (Mix well in mixing bowl) Add 1 cup Milk and about a third cup of oil Mix well. Pour in oblong Pyrex cake pan. Heat at least 1 quart of sweetened fruit (apricots) to boiling. Pour on top of the batter. Add dollop (don't you love the word dollop?) of butter and sprinkle sugar and cinnamon on top. Bake at 350 degrees for 40 to 45 minutes until brown. Enjoy. Mr. and Mrs. Colt McCoy It was an wonderful weekend of wedding fun. From the rehearsal to wedding day luncheon to reception. I am thankful we were able to be there and share in the fun and memories.
