Survival of the Tulips


The tulips actually survived the cold from last week. They are not quite as healthy looking as they would have been minus the 20 something degree temps, but they are trying hard to be beautiful! Just a little touch of spring. It is so nice. Now, if the wind would just quit a little...
I have a list as long as my arm to get through today and all I want to do is sit and read a good book. Oh well... there is much to be done.
As my Mom used to say, "My get up and go, got up and went." Ha.
I will pretend I still have get up and go and GO! Pay bills, laundry, grocery shopping, track meet this afternoon, ladies day at church tomorrow and my in-laws coming tomorrow afternoon to spend the night and visit. Sid is taking his Qualifying exam this afternoon and Will the ACT in the morning. Whew...that is just a little bit of goings on.
Sunday, and a little shorter list for that day sounds good. Whatever your day holds, I pray we will all tackle it with joyful and happy hearts. Blessings. Amy

Red Velvet Trifle...

So easy it's embarrassing! Here it is: One box of Betty Crocker Red Velvet Cake mix. 1 semi sweet choc. chips 1 small Half and Half- (use half a cup) 1small carton of whipping cream 1 package of cream cheese Half cup sugar Bake cake (follow box directions), let cool and crumble. Stir together cream cheese, sugar and whipping cream with blender until smooth. Melt chocolate chips in bowl and then add half and half. Stir until smooth. Layer in trifle dish. Mom's Apricot Cobbler...

It is melt in your mouth good! Ok, I know that yesterday I wrote about not eating any more sugar and I'm not. This is for YOU. I just had to give you Mom's recipe. It is so easy and so incredibly yummy. Hope that you enjoy it. It smells heavenly while cooking too. Easy Apricot Cobbler Jan McCoy 1 cup flour 1 cup sugar 2 Tbs. Baking Powder (Mix well in mixing bowl) Add 1 cup Milk and about a third cup of oil Mix well. Pour in oblong Pyrex cake pan. Heat at least 1 quart of sweetened fruit (apricots) to boiling. Pour on top of the batter. Add dollop (don't you love the word dollop?) of butter and sprinkle sugar and cinnamon on top. Bake at 350 degrees for 40 to 45 minutes until brown. Enjoy. Mr. and Mrs. Colt McCoy It was an wonderful weekend of wedding fun. From the rehearsal to wedding day luncheon to reception. I am thankful we were able to be there and share in the fun and memories. Table at Rehearsal dinner. Sweet. Bridal luncheon. Lots of smiles and laughter. Beautiful girls. Mothers, Grandmothers, Rachel and Aunts. Lots of them!
