What Football Fun!!

Ok, I promise that by the middle of January I will not be talking about football for a long while.
We had a great time in Austin for the Longhorn game against Kansas. Good to be with lots of family including some sweet cousins from Tennessee. We then got to spend a few days at the ranch and relaxed and slowed down for 24 hours. I pray that our Thanksgiving time for all of us will be filled with fellowship with loved ones, good food, laughter and love. Blessings.

So easy it's embarrassing! Here it is: One box of Betty Crocker Red Velvet Cake mix. 1 semi sweet choc. chips 1 small Half and Half- (use half a cup) 1small carton of whipping cream 1 package of cream cheese Half cup sugar Bake cake (follow box directions), let cool and crumble. Stir together cream cheese, sugar and whipping cream with blender until smooth. Melt chocolate chips in bowl and then add half and half. Stir until smooth. Layer in trifle dish. Mom's Apricot Cobbler...

It is melt in your mouth good! Ok, I know that yesterday I wrote about not eating any more sugar and I'm not. This is for YOU. I just had to give you Mom's recipe. It is so easy and so incredibly yummy. Hope that you enjoy it. It smells heavenly while cooking too. Easy Apricot Cobbler Jan McCoy 1 cup flour 1 cup sugar 2 Tbs. Baking Powder (Mix well in mixing bowl) Add 1 cup Milk and about a third cup of oil Mix well. Pour in oblong Pyrex cake pan. Heat at least 1 quart of sweetened fruit (apricots) to boiling. Pour on top of the batter. Add dollop (don't you love the word dollop?) of butter and sprinkle sugar and cinnamon on top. Bake at 350 degrees for 40 to 45 minutes until brown. Enjoy.
