The Draft...Colt to the Browns


We were fortunate to be able to spend the last few days with Colt and a lot of our family in Austin for the draft. It was interesting and filled with quite a bit of drama, but an awesome time together. I am so proud of Colt and the man he has become. We are thrilled he is going to the Cleveland Browns who had made it clear they wanted him all along. The interesting way the quarterbacks were taken and the depth of the talent in this years draft made it possible for the Browns to wait as late as they wanted to pick Colt. (Very stinky of them I must say.) They sure got a GOOD ONE! Lucky them. We are excited for Colt and Rachel and their future in Cleveland and can't wait to go see them!!! Pictures below.

Your mom and dad have created quite a legacy. I feel confident about Colt's future because of the family God has blessed him with. May God continue to use the whole McCoy-Walker family for his glory.

It is melt in your mouth good! Ok, I know that yesterday I wrote about not eating any more sugar and I'm not. This is for YOU. I just had to give you Mom's recipe. It is so easy and so incredibly yummy. Hope that you enjoy it. It smells heavenly while cooking too. Easy Apricot Cobbler Jan McCoy 1 cup flour 1 cup sugar 2 Tbs. Baking Powder (Mix well in mixing bowl) Add 1 cup Milk and about a third cup of oil Mix well. Pour in oblong Pyrex cake pan. Heat at least 1 quart of sweetened fruit (apricots) to boiling. Pour on top of the batter. Add dollop (don't you love the word dollop?) of butter and sprinkle sugar and cinnamon on top. Bake at 350 degrees for 40 to 45 minutes until brown. Enjoy. Red Velvet Trifle...

So easy it's embarrassing! Here it is: One box of Betty Crocker Red Velvet Cake mix. 1 semi sweet choc. chips 1 small Half and Half- (use half a cup) 1small carton of whipping cream 1 package of cream cheese Half cup sugar Bake cake (follow box directions), let cool and crumble. Stir together cream cheese, sugar and whipping cream with blender until smooth. Melt chocolate chips in bowl and then add half and half. Stir until smooth. Layer in trifle dish. Enjoy.  Alaska memories. Love this fat Santa above. Thrilled with how this little wreath turned out. Happy Christmas decorating! Mr. and Mrs. Colt McCoy It was an wonderful weekend of wedding fun. From the rehearsal to wedding day luncheon to reception. I am thankful we were able to be there and share in the fun and memories.
