Spring Break at a Glance...

Our Spring Break Adventure. It started with...

A chilly track meet...

College Station stop to see DaddyBob and Bill
 Hugging Will's neck as he took off for Haiti...
 A stop at Gorman Falls. It is a scenic place on the Colorado River close to Bend, Texas. Many fond childhood memories from this lovely place.




Next stop was at the Ranch outside of Brownwood. Lots of time to sit and walk in this quiet and peaceful setting. Thinking and refreshing our bodies and minds.

Thanks you two wonderful people for fixing us so many meals for the time we had together.
Next stop was at a lake retreat close to Austin. Lots of good time to sit and visit.
Brad and Debra...thank you SO much for the invite!
This kitchen and dining room were so lovely and calm. The light fixture was especially gorgeous.

We watched crazy boys do crazy things
We visited with people that we love...
And more people that we love...
And more people that we love...aren't they cute?
We also watched an interesting game of football with Colt throwing from the top of the pool house to the guys on the jet ski below. Very entertaining.

Ky and Ben enjoyed this... We all enjoyed family time. I love these two too...
Thankful for the refreshing time spent with family,
and for God bringing Will home safety. Oh...and for Spring. It is quite lovely.

What a cool trip and set of pictures!

Our spring break (this week) is the opposite - all three of our kids went to see grandparents for a week, and Cheryl and I are enjoying a quiet week at home. And our 29th anniversary!

Red Velvet Trifle...

So easy it's embarrassing! Here it is: One box of Betty Crocker Red Velvet Cake mix. 1 semi sweet choc. chips 1 small Half and Half- (use half a cup) 1small carton of whipping cream 1 package of cream cheese Half cup sugar Bake cake (follow box directions), let cool and crumble. Stir together cream cheese, sugar and whipping cream with blender until smooth. Melt chocolate chips in bowl and then add half and half. Stir until smooth. Layer in trifle dish. Enjoy.  Alaska memories. Love this fat Santa above. Thrilled with how this little wreath turned out. Happy Christmas decorating! Remember: Your family probably does not care if your house looks like something out of Southern Living. They love the traditions and old ornaments and chipped Christmas mugs and plates. Mom's Apricot Cobbler...

It is melt in your mouth good! Ok, I know that yesterday I wrote about not eating any more sugar and I'm not. This is for YOU. I just had to give you Mom's recipe. It is so easy and so incredibly yummy. Hope that you enjoy it. It smells heavenly while cooking too. Easy Apricot Cobbler Jan McCoy 1 cup flour 1 cup sugar 2 Tbs. Baking Powder (Mix well in mixing bowl) Add 1 cup Milk and about a third cup of oil Mix well. Pour in oblong Pyrex cake pan. Heat at least 1 quart of sweetened fruit (apricots) to boiling. Pour on top of the batter. Add dollop (don't you love the word dollop?) of butter and sprinkle sugar and cinnamon on top. Bake at 350 degrees for 40 to 45 minutes until brown. Enjoy. Enchanted Wedding. Rachel and Colt

Mr. and Mrs. Colt McCoy It was an wonderful weekend of wedding fun. From the rehearsal to wedding day luncheon to reception. I am thankful we were able to be there and share in the fun and memories. Table at Rehearsal dinner. Sweet. Bridal luncheon. Lots of smiles and laughter. Beautiful girls. Mothers, Grandmothers, Rachel and Aunts. Lots of them! Debra and her sweet sisters and sisters in law's Austin My goofy boys. They make me smile. They were waiting for two hours for the wedding. More goofy, sweet boys. Brad and Dick and Tammy. Love you guys so much. Isn't the flower girl precious? They put pictures of the bride and groom's parents and grandparent's wedding cake pictures beside the cake. Such a sweet setting and idea.
