Mother's Day Gift...

For my Mother's Day gift the four of us are going to see the Celtic Woman. I attended one of their concerts in Lubbock a few years ago with my sister-n-law Jan and my Mom. Absolutely one of the best concerts I have ever seen. It can't quite touch a Switchfoot concert but it is good. :)
I am excited about taking my boys to hear them. Should be interesting...
Oh, so anticipating this...

By the way, our oldest is HOME! Finals are finished and I think he might sleep for a week. He looked so tired. The inside of his truck...a whole dorm room worth of stuff.

I ALMOST went to see Celtic Woman so I hope you enjoyed it enough for the BOTH of us :) and I am in college...my car looks like your son's at least twice a year as well! Enjoy the family time!

Red Velvet Trifle...

So easy it's embarrassing! Here it is: One box of Betty Crocker Red Velvet Cake mix. 1 semi sweet choc. chips 1 small Half and Half- (use half a cup) 1small carton of whipping cream 1 package of cream cheese Half cup sugar Bake cake (follow box directions), let cool and crumble. Stir together cream cheese, sugar and whipping cream with blender until smooth. Melt chocolate chips in bowl and then add half and half. Stir until smooth. Layer in trifle dish. Mom's Apricot Cobbler...

It is melt in your mouth good! Ok, I know that yesterday I wrote about not eating any more sugar and I'm not. This is for YOU. I just had to give you Mom's recipe. It is so easy and so incredibly yummy. Hope that you enjoy it. It smells heavenly while cooking too. Easy Apricot Cobbler Jan McCoy 1 cup flour 1 cup sugar 2 Tbs. Baking Powder (Mix well in mixing bowl) Add 1 cup Milk and about a third cup of oil Mix well. Pour in oblong Pyrex cake pan. Heat at least 1 quart of sweetened fruit (apricots) to boiling. Pour on top of the batter. Add dollop (don't you love the word dollop?) of butter and sprinkle sugar and cinnamon on top. Bake at 350 degrees for 40 to 45 minutes until brown. Enjoy. Mr. and Mrs. Colt McCoy It was an wonderful weekend of wedding fun. From the rehearsal to wedding day luncheon to reception. I am thankful we were able to be there and share in the fun and memories. Table at Rehearsal dinner. Sweet. Bridal luncheon. Lots of smiles and laughter. Beautiful girls. Mothers, Grandmothers, Rachel and Aunts. Lots of them!
