Little Cabin In The Woods...

A few weeks ago I was blessed to be able to spend a week back up in the mountains of New Mexico.
It was a peaceful time.


 Wonderful place to sit and think and pray and listen to the sounds of the out of doors.



My Mama was with me along with my sweet friend, Jenni. 
Here Mom is sitting and enjoying the view.



We were also blessed to spend a little time with this super, fantastic boy of ours.
Miss you youngest gentle giant!

Mom's Apricot Cobbler...

It is melt in your mouth good! Ok, I know that yesterday I wrote about not eating any more sugar and I'm not. This is for YOU. I just had to give you Mom's recipe. It is so easy and so incredibly yummy. Hope that you enjoy it. It smells heavenly while cooking too. Easy Apricot Cobbler Jan McCoy 1 cup flour 1 cup sugar 2 Tbs. Baking Powder (Mix well in mixing bowl) Add 1 cup Milk and about a third cup of oil Mix well. Pour in oblong Pyrex cake pan. Heat at least 1 quart of sweetened fruit (apricots) to boiling. Pour on top of the batter. Add dollop (don't you love the word dollop?) of butter and sprinkle sugar and cinnamon on top. Bake at 350 degrees for 40 to 45 minutes until brown. Enjoy. Red Velvet Trifle...

So easy it's embarrassing! Here it is: One box of Betty Crocker Red Velvet Cake mix. 1 semi sweet choc. chips 1 small Half and Half- (use half a cup) 1small carton of whipping cream 1 package of cream cheese Half cup sugar Bake cake (follow box directions), let cool and crumble. Stir together cream cheese, sugar and whipping cream with blender until smooth. Melt chocolate chips in bowl and then add half and half. Stir until smooth. Layer in trifle dish. Enjoy.  Alaska memories. Love this fat Santa above. Thrilled with how this little wreath turned out. Happy Christmas decorating! Remember: Your family probably does not care if your house looks like something out of Southern Living. They love the traditions and old ornaments and chipped Christmas mugs and plates. Enchanted Wedding. Rachel and Colt

Mr. and Mrs. Colt McCoy It was an wonderful weekend of wedding fun. From the rehearsal to wedding day luncheon to reception. I am thankful we were able to be there and share in the fun and memories. Table at Rehearsal dinner. Sweet. Bridal luncheon. Lots of smiles and laughter. Beautiful girls. Mothers, Grandmothers, Rachel and Aunts. Lots of them! Debra and her sweet sisters and sisters in law's Austin My goofy boys. They make me smile. They were waiting for two hours for the wedding. More goofy, sweet boys. Brad and Dick and Tammy.
